What’s not to love about garlic, butter, and parsley? Our perfectly cooked, Instant Pot Garlic Potatoes are garlicky and delicious! This buttery side dish is cooked in minutes in the Instant Pot and is quick and easy for a weeknight meal, but special enough for company.

INSTANT POT GARLIC POTATOES

INSTANT POT GARLIC POTATOES

What’s not to like about garlic, butter, and parsley? This buttery side dish is cooked in minutes in the Instant Pot and it’s easy for a weeknight meal, but flavorful enough for a special meal.

Ingredients

  1. Add 1½ cups water to the Instant Pot. Add ½ teaspoon kosher salt to the water and then set the trivet in pot. Wash potatoes well and pat dry. Add potatoes to the basket and place basket on top of the trivet.
  2. Place pressure lid on Instant Pot and set pressure release valve and settings according to Steam instructions for your Instant Pot/Cooker for baby or small whole potatoes. Press “Steam” then set time for 10 minutes (or the time according to your cooker model instructions). Then press “Pressure Cook” (See Note #1).
  3. While potatoes are steaming, with a knife, smash garlic cloves on a cutting board and remove and discard skins. Cube butter and place in a small microwave safe glass bowl. Use a garlic press to press garlic directly on top of the butter. Add fresh thyme, remaining ½ teaspoon salt, and pepper. Loosely cover with plastic wrap and set aside. With a sharp knife, chop parsley and set aside.
  4. When cooking is completed, the pot will beep. Your Instant Pot should now be on "Keep Warm" mode. Turn the valve to “Venting” position to do a quick release.
  5. About 2 minutes before you are ready to remove the potatoes, place the covered bowl with butter in the microwave and heat for about 30 seconds (times will vary greatly for each microwave). Watch it closely, as it should bubble up and boil briefly (for 1 or 2 seconds only), but it should NOT boil over. Once it bubbles up, stop the microwave and let rest for 1 minute. Then start microwave again until it bubbles up to the top (about 10-20 seconds) once more. Remove plastic and stir.
  6. Once pin drops on the Instant Pot, open the lid and carefully remove basket and transfer potatoes to a large mixing bowl. Immediately pour hot garlic butter all over potatoes and toss with a silicone spatula to evenly coat potatoes. Sprinkle with chopped parsley and toss again. Serve immediately.

  1. The recipe instructions are for a 6-quart Instant Pot Duo. We also made this recipe in an 8-quart Ninja Foodi Deluxe Tendercrisp Pressure Cooker FD400 Series. For Ninja cooking instructions, please refer to Step-by-Step Instructions (details in each step) in recipe web page. Instant Pot and Ninja Foodi Instructions provided are based on our machine models. We recommend using our instructions as a guideline, but following the specific Steam Method instructions for your cooker. Every Instant Pot and Cooker will vary based on brand and model, so it’s important to follow the instructions and cooking time for your machine. 
  2. This butter sauce can be done on the stove top, but a microwave is much faster and does the job perfectly. Microwave method will cook the garlic without browning and take the sharp taste out of the raw garlic. 
  3. Leftovers?  Cool completely, then store leftovers in the refrigerator in an airtight container for up to 2 days. Can be reheated in the microwave.
  4. If you don’t have an Instant Pot, just steam potatoes over the stove and follow instructions for the rest of the recipe.

Step by Step Instructions

PREPARATION

Organize all your tools and ingredients before you begin. Getting all your ingredients in one place at the beginning will shorten your prep time.

INSTANT POT vs. NINJA FOODI DELUXE

Note: The recipe instructions are for a 6-quart Instant Pot Duo. We also made this recipe in an 8-quart Ninja Foodi Deluxe Tendercrisp Pressure Cooker FD400 Series. Ninja cooking instructions will be provided in a “note” at the bottom of each step, if different than the Instant Pot instructions.

STEP 1

a) Add 1 to 1 ½ cup water (see Note below) to the Instant Pot. Then add ½ teaspoon kosher salt to the water.

b) Set the trivet in pot.

c) Wash 24 ounces creamer potatoes (petit gold, yukon gold, baby red) well and pat dry. Add potatoes to the basket and place basket on top of the trivet.

Note: Amount of water depends on your machine instructions for STEAM setting. General rule of thumb is 1 cup water to 1 pound of potatoes, unless your machine instructions say otherwise.

Ninja Cooking Instructions - For 8-quart, add 1 ½ cups water to pot. No trivet needed, just place basket directly in Ninja pot.

STEP 2

Place pressure lid on Instant Pot and set pressure release valve and settings according to Steam instructions for your Instant Pot/Cooker for baby or small whole potatoes. Press “Steam” then set time for 10 minutes (or the time according to your cooker model instructions). Then press “Pressure Cook.”

Ninja Cooking Instructions - Place pressure lid on Ninja and turn pressure release valve to the “VENT” position. Press “FUNCTION” and then turn dial to “STEAM.” Press “TIME” and set for 10 minutes (turn dial to increase or decrease time, as needed). Press “Start/Stop” to begin cooking. 

STEP 3

While potatoes are steaming,

a) With a knife, smash 2 garlic cloves on a cutting board and remove and discard skins.

b) Cube 2 tablespoons unsalted butter and place in a small microwave safe glass bowl. Then use a garlic press to press garlic directly on top of the butter.

c) Add 1 teaspoon fresh thyme leaves (about 2 sprigs), ½ teaspoon kosher salt, and ½ teaspoon ground black pepper. Loosely cover with plastic wrap and set aside. 

d) With a sharp knife, chop 2 tablespoons Italian parsley and set aside.

Note: Potatoes typically require a lot of salt. Salting the water will also season the potatoes. If you prefer, just use salt and pepper to taste.

STEP 4

When cooking is completed, the pot will beep. Turn the valve to “Venting” position to do a quick release. Your Instant Pot should now be on “Keep Warm” mode.

Ninja Cooking Instructions - When cooking is completed, the pot will beep and automatically switch to “Keep Warm” mode. Steam will release a bit more and the silver float valve will still be up.

STEP 5

About 2 minutes before you are ready to remove the potatoes, place the covered bowl with butter and herbs in the microwave and heat for about 30 seconds (times will vary greatly for each microwave). Watch closely, as it should bubble up and boil briefly (for 1or 2 seconds only), but it should NOT boil over. Once it bubbles up, stop the microwave and let rest for 1 minute. Then start microwave again until it bubbles up to the top (about 10-20 seconds) once more. Remove plastic and stir.

Note: This sauce can be done on the stove top, but a microwave is much faster and does the job perfectly. Microwave method will cook the garlic without browning and take the sharp taste out of the raw garlic.

STEP 6

Once the pin drops on the Instant Pot, open the lid and carefully remove basket and transfer potatoes to a large mixing bowl.

Immediately pour hot garlic butter all over potatoes and toss with a silicone spatula to evenly coat potatoes. Sprinkle with 2 tablespoons chopped Italian parsley and toss again. Serve immediately. 

Ninja Cooking Instructions - Before opening the lid, make sure the silver float valve has dropped completely (you will hear it plop down). Once valve has dropped, open the lid and carefully remove basket and transfer potatoes to a large mixing bowl.

To round out your meal, serve with any kind of protein, like beef, chicken, or fish. These potatoes taste especially yummy with beef stew (like our Boeuf Bourguignon), to soak up some of that tasty sauce!

What’s not to love about garlic, butter, and parsley?

Potatoes are not typically in my go-to repertoire for side dishes. But when I need a side dish to soak up some tasty sauce from a stew, potatoes are the perfect choice. However, my dilemma has always been how to make them interesting? Well, adding butter and garlic never hurts! 

Depending on the flavors in your main dish, you can amp up the garlic flavor in these potatoes, or tone it down. Made according to our recipe, these potatoes are garlicky and delicious! The addition of chopped Italian parsley adds a fresh herby flavor to this dish. If you need to tone it down, just reduce the garlic by half to make them flavorful enough to be interesting, but not overpowering. 

These Instant Pot Garlic Potatoes are simple, really delicious, and dare I say, even memorable. One of our favorite meals to serve with these potatoes is our Boeuf Bourguignon. Since Beef Burgundy Stew has strong flavors, we chose to tone down the potatoes and not overpower the meal. We used only 1 large clove that day and it was the perfect accompaniment for the stew and provided just enough flavor to be interesting. If you are cooking a milder main dish, use 2 garlic cloves and enjoy!

We used Petite Gold potatoes for this recipe, which have a yellow flesh and tender skin. You can use any type of small potatoes, including Yukon Gold (which is virtually synonymous with the Gold potatoes), or even baby red potatoes. Just do NOT use Russet or any thick skinned, or large potatoes.
