This 2 ingredient recipe couldn’t be easier! Our Chipotle Mayo is quick and easy and transforms plain mayonnaise into something slightly spicy and delicious! It makes a flavorful spread to spice up sliders, cold and hot sandwiches (especially paninis), and more.

CHIPOTLE MAYO

This 2 ingredient recipe couldn’t be easier and it can be made as mild or spicy as you want! Our Chipotle Mayo is quick and easy and transforms plain mayonnaise into a slightly spicy and delicious spread for sliders, sandwiches, and even tacos!

  1. Remove 1-2 peppers from one can of chipotle peppers in adobo sauce (see Note #1) and place on a cutting board. With a sharp knife, finely chop 2 tablespoons chipotle peppers with sauce. Add them to a small glass bowl.
  2. To the same bowl with the chopped peppers, add mayonnaise and combine with a silicone spatula. Add Kosher salt and pepper to taste (about a pinch of each) and mix well. Store in the refrigerator covered in the same glass bowl or an airtight glass container for up to 2 weeks.

Notes

  1. The base recipe calls for only 1 chipotle pepper, which yields a moderately spicy mayonnaise. For a more spicy mayo, use 2 peppers (or more) plus sauce, depending on your preference for level of spiciness. To increase the spice level only a little, use only 1 pepper and add 1 tablespoon of sauce to the mixture.
  2. Hand mixing this spread is a much quicker method and requires less clean up. We also like this spread with small chunks of chipotle peppers. If you prefer a smoother mayo, just skip the chopping and throw all the ingredients in a small food processor and purée until combined and smooth. 
  3. This spread is wonderful on sandwiches and sliders. Made as a sauce, it’s great on tacos. Just add 1 tablespoon fresh lime juice and mix thoroughly. The lime juice will thin out the sauce to make it easier to drizzle, and add acidity to balance out the richness.
  4. If using store bought mayo, buy a high quality brand of real mayonnaise. Feel free to make your own mayonnaise, as it will add so much more flavor to this spread.
  5. This chipotle mayo tastes better with time. So when possible, make ahead and refrigerate until ready to serve, to allow the flavors to meld together. You will be glad you did!

PREPARATION

Organize all your tools and ingredients before you begin. Getting all your ingredients in one place at the beginning will shorten your prep time.

(We consider this a 2 ingredient recipe, as salt & pepper are not usually counted as an ingredient in most recipes).

STEP 1

The base recipe calls for 1 chipotle pepper, which yields a moderately spicy mayonnaise. For other spicy variations, see Note below.   

a) Remove 1-2 peppers from one can of chipotle peppers in adobo sauce (see Note below) and place on a cutting board.

b) With a sharp knife, finely chop 2 tablespoons chipotle peppers with sauce.

c) Add the chopped peppers to a small glass bowl.  

Note: For a more spicy mayo, use 2 peppers (or more) plus sauce, depending on your preference for level of spiciness. To increase the spice level only a little more, use only 1 pepper and add 1 tablespoon of sauce to the mixture.

STEP 2a

To the same bowl with the chopped peppers, add ½ cup real mayonnaise (homemade or store bought) and combine with a silicone spatula.

Add Kosher salt and pepper to taste (about a pinch of each) and mix well. Store in the refrigerator covered in an airtight glass container for up to 2 weeks. 

Note: Optional Ingredient - Add a little fresh lime zest to this mixture for an extra layer of flavor.

SERVING

Once the flavors have had time to meld, spread chipotle mayo on sliders, and cold or hot sandwiches (it’s great on paninis). Or just transfer to a pretty serving dish and allow everyone make their own sandwich to their liking!

Note: To make this into a sauce for tacos, see Notes section below for details.

This Chipotle Mayo recipe came about from one of our test kitchen projects. We have been on a panini kick and wanted to spice up our upcoming chipotle chicken panini recipe (coming soon)

If you have been following us, you have probably noticed we don’t often use very high fat condiments on our paninis. Although they are delicious, they do hike up the calories. For that panini recipe, we wanted something creamy, spicy, and smoky. So, we threw this together to use as a spread. 

Most chipotle mayos are smooth, but we preferred having a little texture, with tiny pieces of chipotle peppers peaking through the creaminess of the mayonnaise. If you prefer smooth, you can always throw everything in the food processor and purée to your liking. Whichever way you like it, the chipotle peppers in adobo sauce truly transform plain mayonnaise into something spicy and delicious!

This chipotle mayonnaise recipe is quite versatile and you can make it as mild or spicy as you want. Making a sandwich for lunch? Spread this chipotle mayo on your bread to brighten up your sandwich.
